More time for Netflix.
Sometimes you can be bothered to cook, sometimes you can’t. Unfortunately, some of the times you can’t are also the times that you’ve promised to make your mates a nice home-cooked meal. Not ideal.
BUT there is a solution. Now we’re not encouraging you to lie to your nearest and dearest, but you COULD buy food, but dress it to look homemade. Yep.
However, homemade food is a hell of a lot healthier, and with these recipes you can make dinner in under 10 minutes.
GRILLED PORTUGUESE CHICKEN AND RICE
Serves: 4 | Prep time: 5 mins | Cook time: 5 mins

INGREDIENTS
2 x ½ chicken
4 spring onions, chopped finely
1 clove garlic, crushed
1 red pepper, chopped finely
125 g canned corn kernels, drained, rinsed
2 x 250g packets cooked long-grain white rice
40 g pitted green olives, chopped coarsely
1 tbsp chopped fresh coriander (cilantro)
METHOD
1. Heat oil in a large frying pan; cook onion, garlic, pepper and corn, stirring, until vegetables have softened. Add rice; cook, stirring, 5 minutes, to separate rice grains and heat through. Stir in olives and coriander; season to taste.
2. Serve chicken with rice and chutney.
PORTUGUESE CHICKEN BURGER
Makes: 1 | Prep time: 5 mins | Cook time: 5 mins

INGREDIENTS
¼ chicken
1 tablespoon good-quality whole-egg mayonnaise
¼ teaspoon crushed garlic, extra
1 crusty bread roll, split
2 baby cos lettuce leaves, washed, dried
1 small ripe tomato, thinly sliced
METHOD
1. Combine the mayonnaise and extra garlic in a small bowl. Taste and season with pepper.
2. Preheat grill on high. Place the bread roll, cut-side up, on a baking tray and cook under the grill for 2 minutes or until toasted.
3. Place the bread roll base on a serving plate. Spread with half the mayonnaise mixture. Top with lettuce, tomato, chicken and the remaining mayonnaise mixture. Season with pepper. Top with remaining bread roll. Eat immediately
