Why you shouldn't put chocolate in the fridge

We all know someone that does this.

What is it with people keeping chocolate in the fridge?? We feel it’s always parents or grandparents.

Well finally we have some proof to bring to your rents or gramps to stop them putting their precious chocolate in the fridge.

 

The Sun reports that according to chocolate expert (yes we had now idea you could be an expert in chocolate), Luke Owen Smith, your sweet treats should NEVER be kept in the fridge, even when the weather is warm.

Luke, who owns an online store called the Chocolate Bar, told Stuff in New Zealand that the lower temperature messes with the taste, making it “dull” and “doesn’t release the flavours”.

“Extremely cold temperatures can mess with the temperature as much as hot temperatures can.

“Instead, chocolate should be stored in a cool, dark cupboard, preferably at between 10 and 20 degrees Celcius — with 15 degrees being the perfect temperature.”

Luke says that it should only be put in the fridge if the temperature inside the home reaches 28 degrees.

If your home does reached above 28 degrees Celsius then Luke recommends storing chocolate in an airtight container before putting it in the fridge as cocoa butter absorbs flavours and odours.

Another reason for keeping the chocolates out of the fridge is something called “sugar bloom”. This is the white stuff that is seen on chocolate when you unwrap it when in the fridge.

So when it is chilled and then exposed to warmer air, causing condensation on the surface which dissolves some of the sugar.

This will then re-crystallise, leaving a grainy, white surface layer.
